Sorghum. First domesticated in Africa some 5,000 years ago, this grain spread to China and eventually to the USA. It is used in many ways: as fermented and unfermented porridge, flat cakes, and even as a beer ingredient. It also is used as animal feed. The stem may contain up to 16% sugar, which may be turned into syrup.
